At Cova Negra Restaurant, cuisine is a form of expression. Guided by chef Pablo Tamarit, each dish reflects a journey shaped by curiosity, continuous learning, and a deep passion for ingredients and creativity.




Originally from Valencia, Pablo began his professional path in the world of gastronomy by combining training and hands-on experience in catering, eventually leading the service entirely. His time in renowned kitchens such as Envero (Valencia), Can Simoneta (Canyamel), and the groundbreaking DiverXO with Dabiz Muñoz transformed his culinary vision forever.




His international journey — from the Americas to Asia — working alongside greats like Gastón Acurio in Lima, has enriched his cooking with flavours, ingredients, and techniques from diverse cultures. These influences now come together in a contemporary Mediterranean proposal that is elegant, honest, and refined.




At Cova Negra, every creation fuses local essence with global inspiration, always using top-quality products and impeccable technical execution. The result: dishes that surprise with their balance, presentation, and flavour.

Located in the former chapel of the convent, Bar Sa Capella is much more than just a bar: it's a place where history, design, and flavour come together in perfect harmony. Its original altarpiece, carefully preserved, gives a unique character to this intimate and soulful space.


Here, informality blends with sophistication in a relaxed and welcoming atmosphere — ideal for enjoying a pre-dinner cocktail, an afternoon coffee, or a light bite at any time of the day.


Our menu offers a thoughtful selection of timeless classics and signature creations, all crafted with care, balance, and attention to detail. Though it doesn't change often, each drink reflects our commitment to quality and unhurried enjoyment.

Cova Negra Restaurant takes its name from the emblematic mountain that shapes the character of this part of Mallorca, and like the mountain itself, it embodies a strong and singular presence in the local gastronomic scene. This space was created to offer a high-level culinary experience, both for hotel guests and external visitors.




Under the direction of chef Pablo Tamarit, Cova Negra’s cuisine combines contemporary techniques with seasonal, locally sourced ingredients, resulting in refined, creative, and honest dishes. Each plate reflects its surroundings, the chef’s drive for innovation, and his commitment to excellence.
